I’m Emiliano Subacchi and wine is my greatest passion. I grew up in Milan, but I’ve always felt drawn to the countryside, so much so that I pursued agricultural studies as an excuse to get closer to nature. At 17, I moved to Friuli to complete my education. That’s where I met a winemaking professor whose passion opened the door to a world I’ve never left since.
Our Story

I started working at this winery as an employee and quickly grew attached to the land and its fruits. In 2015, after years of hard work and dedication, I took over the business and completely transformed it. What was once focused on producing grapes for bulk wine became something more personal: a brand that tells the story of the land, the traditions, and the respect for nature.
That’s how Paradiis was born, a name that plays on Friulian pronunciation and the idea of “paradise”: a place of passion and authenticity, just like the wine I produce.

If Paradiis is thriving and constantly evolving today, it’s also thanks to the people who share this journey with me every day. I wouldn’t be able to focus on managing and spreading my vision without the invaluable work of those who care for the vineyards and oversee every step of the production process. Our frasca is a little world of its own, built on hospitality and availability. The Trieste shop is run with independence, energy, and real skill, and it’s an essential asset for us. Paradiis isn’t just the result of a vision, it’s the product of a shared commitment by people who put passion and dedication into making it grow, day after day.

The vineyards of Paradiis are nestled in an truly special place, suspended between the Adriatic Sea This land has a long and rich history: once a swamp, it was gradually reclaimed and enriched with mineral clay soil ideal for growing grapes.
This unique setting creates a perfect microclimate: the afternoon sea breezes and the soil’s natural composition give our wines their freshness, salinity, and surprising structure. Even during the hottest months, our vines benefit from natural ventilation that keeps the grapes in perfect balance, with no need for artificial intervention.
Paradiis vineyards aren’t just an agricultural resource, but a heritage. Many of our vines are over 70 years old, silent witnesses to the story of our land. We’ve chosen to honor this legacy with sustainable, low-impact farming methods, staying true to the land without compromise.

As part of the agricultural industry, we fully depend on our surrounding, just as it depends on us. That’s why we grow our produce organically and sustainably. Over the past decades the carbon footprint of the winery has been positive, which is something we’re really proud of.
My winemaking philosophy is simple: work with the utmost respect for nature and let the wine speak for the land, without gimmicks.. That’s why we don’t use chemical herbicides. We’re not chasing certifications or labels, our approach is a conscious choice driven by ethics and quality. We prefer employing techniques like green manuring, which allows the soil to regenerate naturally, enriching it with essential micro and macro elements.
Another distinctive choice we’ve made is to vinify mainly in stainless steel. This allows us to preserve the true character of the grapes, without the influence of wood, resulting in fresh and straightforward wines with a strong personality. Every bottle we produce is a genuine expression of our land and our craft.
Our wines are mineral-based, structured and fresh at the same time.
Even our red wine, often underestimated in the Friulian Plain, surprises for its depth and lingering finish.
